It is a clean, fresh wine with a hint of salinity / minerality, an elegant subtlety and rounded, smooth texture. Designed to be drunk in the first couple of years of release, it is a fun wine, suited to aperitifs, charcuterie, salads, fresh sheep and goat cheese, and seafood. It also pairs very well with spicy or aromatic food.

The technical bits. The grapes were harvested at Martin’s Lane Vineyard in the Crouch Valley in Essex in late September in beautiful condition. The ripeness suited our intended style very well. Much riper and the wine would be quite ‘exotic’, much less ripe and it would tend to leanness - for us this is the sweet spot of fruit, elegance and drinkability. The fresh pressed juice was kept with its pressed pulp for a few days at low temperatures in order to enhance its texture and flavours (this is called cold stabulation). There followed a long cool fermentation to dryness at around 15 degrees. The wine was then amalgamated and all held in stoneware pithos (jars)on its lees for 6 months. We treat each wine depending on its intended style and context of consumption, and handle gently and minimally. This wine is bright and fresh, so it has been fined using the bare minimum necessary of a vegan fining agent, and then filtered.
Sulphites are used sparingly in its production to protect the wine - we keep the levels low as the wine is not designed for ageing, but rather to consume in the first couple of years. In this case total sulphite (SO2) is less than 90mg/l, the free portion, at bottling, was 30 mg/l. These levels are considered by most to be ‘low sulphur’ and are under half of what is allowed even under organic regulations.
The wine is closed with a Diam 3 cork so guaranteed no cork taint. Instead of using a plastic or tin capsule, we have simply placed a paper sticker over the bottle top. A capsule is not a requirement and is of no advantage to the wine, it is however a waste of resources. Our paper sticker can assure you the wine has not been tampered with, keeps the bottle top clean, and completes the ‘look’. We believe this combination is the best for the wine and the environment.
